When I was a child around 9 years old, I had a vision: I was standing on the bridge facing the gray cement, LA County Hospital, silently witnessing the cries of suffering patients. In the vision, I saw myself dressed in white with gold colors over my head and my mission was to ease suffering. Years later I realized the true meaning of the vision; I was to help people stay healthy, so they did not have to go to hospitals.
This website has been created for the purpose of viewers to learn more about me as author of Vegan Bite By Bite, a self-help vegan cookbook loaded with valuable information about the journey to becoming vegan. My passion is the advancement of vegan nutrition. The vegan gourmet cooking and raw food classes I teach, as well as consulting, vegan food shopping and meal/menu planning are also services I provide.
My focus for the past 30 years continues to be the teaching of the transition towards becoming vegan, which is also the subject of the book Vegan Bite By Bite: a recipe for transition, with a vegan cookbook as one of the ingredients. The book contains 200 pages of text about ‘how to’ make the transition, interviews from vegan medical doctors, authors, etc. plus more than one hundred vegan recipes, food photographs, illustrations and cartoons.
Health was the biggest topic in our house because of my mother’s constant fascination with it. Many of the doctors my mother took me to, such as Dr. Bernard Jensen, Dr. Bragg, Jr., Dr. Henry Beiler, were doctors in preventive medicine and nutrition. I was coached so frequently by my mom as a child, that dietary coaching became my passion.
In my early thirties, (the 60's) I experimented with what was happening with the counter culture. Afterwards my health was in serious jeopardy. Fortunately, I was guided to a Chiropractor with knowledge of the vegetarian diet.
At first, I found the vegetarian diet and food preparation so difficult to understand. It took me five years to master the transition to a vegetarian diet, bite-by-bite. As I shopped, not knowing what to eat or how to prepare these new foods, I realized that there would be others, like myself, who would turn to a vegetarian diet and would need help understanding the transition. I decided at that time that my life’s work would be to teach the Transition Diet.
Once on the path to personal health, using my background and spontaneous experimental methods, I spring-boarded from experience to experience, cooking for doctors, catering, consulting and teaching, privately and with groups.
I practiced vegetarianism for many years before becoming educated to the benefits of a vegan diet. After reaping the dietary benefits of vegan meals, I then began consulting, cooking and teaching. Working as a vegan consultant and menu designer for Woody Harrelson’s restaurant O2, I began ‘playing’ in the kitchen with vegan foods, using all raw ingredients, and creating gourmet recipes for the menu and customers. I was aware of the value of a vegan raw living food diet but I had no familiarity with the raw preparation of vegan food recipes.
I was a chef for 25 years before I started exploring the world of raw cuisine. I found it both a challenge and an art. It came very naturally and intuitively for me to ‘play’ with vegan raw foods and prepare vegan meals. I love the way it encourages inner creativity. The color spectrum of raw vegan gourmet cuisine as vegan meals are so vibrant, it encourages one’s own inner artist to ‘play’ with nature’s palette.
We have all been so conditioned by the meat and dairy industries to believe that animal and dairy products are healthy, as well as necessary for protein and calcium. According to current research by prominent medical doctors and researchers, this is not true! Instead of being healthy for the body, these foods are the leading cause of degenerative conditions such as heart disease and cancers, as well as osteoporosis, just to name a few conditions. Our conditioning tells us that animal proteins are the building blocks for the body. That's true, they build cholesterol and they block arteries.
